It was a Sunday afternoon and I was so excited because my mom and I were going to buy cajeta (goat milk based caramel). We were stopping at a small shop known best for making the best cajeta and traditional Mexican candies in my hometown named, " La Vencedora." What I was most excited for was the treat I would always take home with me which was a meringue topped with colorful sprinkles that were always displayed in a beautiful crystal jar.
The meringues were a by product for when making rompope. Rompope is a drink very similar to eggnog and the recipe calls for a lot of egg yolks, so the left over egg whites were used to make meringues.
If you don't have the right recipe the meringues are not so easy to make and you can fail many times while attempting to make them. When I was a teenager I was so intrigued with how to make them and I tried several recipes, but none of them came out as the ones I used to have in the candy shop "La Vencedora."
Meringues are a sweet treat enjoyed around many countries, and again are fairly easy to do when you have the right recipe. These treats are special because they are gluten free and inexpensive.
Now a days you can enjoy meringues topped with Chantilly cream and many other fancy toppings. Obviously these new additions make the meringues a more expensive but more fancy treat.
