Traditional Green Chilaquiles
Ingredients:
15 corn tortillas
2 cups green salsa
1/4 cup queso fresco
2-4 tbsp jocoque or light sour cream
8 pickled red onion rings
PROCEDURE
1) Cut the tortillas in triangles and deep fried them at a temperature between 350º F-375ªF. Set them aside.
2) Heat 1 tbsp of olive oil and add the salsa. When the salsa starts boiling, turn off the heat and add the chips all at once, stir with two spoons until the salsa is evenly distributed.
Transfer them to a serving plate add one layer of chilaquiles, add cheese, more chilaquiles, more cheese, jocoque, onions and LISTO!!!
You can add a side of pinto beans, eggs or a meat of your choice!
