In our house we love tamales, although the ones we can buy here does not compare to the beautiful fluffy tamales from my hometown, we still enjoy a Tex-Mex tamal.
When we buy tamales there are always some leftovers and I like to use them to make a"Tamalon" this is how my family named this recipe and I like to call it "Tamale Casserole", sounds less aggressive I think, LOL.

Beef Tamales Casserole Preparation time: 10 minutes | Baking time: 20-25 minutes | Servings: 6-8 slices |
Ingredients:6 beef tamales 2 cups shredded beef (Eye of round roast) 2 cups green tomatillo salsa 1 cup shredded oaxaca cheese 3 Tbsp sour cream (optional)

ProcedurePreheat oven at 350ºF
1) Slices the tamales in small pieces, like 1-2 inches, they cut easier when they are cold and arrange them in the bottom of a small baking pan. 2) Add the shredded beef on top. 3) Add the salsa and cheese 4) Bake for 30-35 minutes until all the cheese is melted.
To serve you can top it with some sour cream and a side of beans.
