I am always looking to cook something new or challenge myself with coming up with a new recipe. I recently discovered that I am allergic to shrimp, so I stay away from cooking shellfish to be on the safe side.

But one day my husband bought lobster tails and asked if we could give them a try. So we baked them and I dared to give them a try and turns out they are delicious!! 

They are quite easy to make, but as some seafood the hard part is to open the shell and expose the flesh of the lobster for it to bake.

One thing that is really important is the baking time. You really don't want to over bake the lobsters because the meat turns chewy and will not be the pleasant soft lobster meat.

We recommend using a digital thermometer and setting it to 145 ºF. When it reaches that temperature, add the butter and put it in the broiler for 1 minute. You have to pay attention to the internal temperature and make sure it doesn't pass 160 ºF.

                 Baked Lobster Tails

Preparation time: 60 minutes

Baking time: 10-15 minutes

Servings: 4


Ingredients:

4 lobsters tails-cleaned and opened

• 2 tbsp mince garlic

• 1 parsley bunch, chopped

• 1-2 meyer lemons, juice

• 4 tbsp olive oil

• 2 tbsp butter

• Sea salt and pepper

Procedure

Preheat oven at 350 ºF

1.- Wash each lobster tail in running water. With some scissors cut in the middle of the shell starting in the opposite side of the fin tail, very carefully try to peel the flesh out of the shell on each side of the lobster, leaving the fin tail attached.

2.- Place the lobsters on a safe bake dish and put a little bit of olive oil on top and bottom of the flesh. Rubbed gently.

3.- In a small bowl mix the garlic, parsley, the lemon juice and season with salt and pepper.

4.- Divide the parsley- garlic mix in four parts and put some on top of each lobster.

5.- Depending on the weight of each lobster bake them for 10-12 minutes ( 5-6 oz lobster ) until they reach an Internal temperature of 145ºF. They reach this temperature quite fast, just be careful, if not they will turn chewy. If you are not going to use the broiler, leave them a little bit longer paying attention that the inside temperature stays between 145 -160 ºF degrees.

6.- Once they reached that temperature take them out of the oven, add a piece of butter on top of each lobster and put it in the broiler for 1 min.
