Mole is one of the most complex Mexican dishes you can make. If you want to make a good mole, you have to start by selecting the best and freshest ingredients possible. I really enjoyed helping my mom make mole. It was a three day process because she goes through each step very meticulously and somehow really enjoyed the process of making it.
If you live in another country and some ingredients are hard to get or even if you don't have the time to make it from scratch, now a days there are several types of dehydrated mole paste. They are truly really, really good and you can have a mole on your table in no time.
There is no shame in making mole using a ready to use paste. Yet, I encourage making mole from scratch so that you can get the appreciation for the process and so that you can really see the transformative process of mole.
