Several years ago I ordered a mediterranean tuna salad in a restaurant name Il Vicino, not sure if they are still open, but OMGosh, I LOVE it, and since then I have tried to came up with the recipe of my own.
I have served it over a fresh lettuce salad, in a sandwich, with crispy bread, over tostadas, as a filling for stuffed peppers, and any way I prepared it it is always a treat!
I love chicken and tuna salads, but this is my favorite one, hope you like it!

INGREDIENTS
1/4 cups Sun dried tomatoes
1/4 cups Parmesan cheese
1/2 cans artichokes hearts, drained
2 tbsps capers
1/4 cups mayonaise
1/4 cups greek yogurth
1 tbsps sea salt
1 tsps pepper
2 cans white albacore tuna
PREPARATION
1.- Drain the tuna and set aside.
2.- Blend the sun dried tomatoes, parmesan, capers, artichokes, mayonnaise, yogurt, salt and pepper until smooth. Add this dressing to the tuna and stir until combine.
