        Balsamic Chocolate Cookies


Prep time: 15 min


             Bake time: 15-18 minutes

                     Servings: 13


Ingredients:

1 cup unbleached all purpose flour

1 tsp baking powder

1/8 tsp sea salt

2 tbsp organic balsamic vinegar

4 tbsp extra virgin olive oil

1/3 cup non-fat Greek yogurt

1/3 cup packed brown sugar

2/3 cup sugar

1/2 cup  Dutch cocoa powder

1/2 cup Mexican chocolate chunks


Optional:

2 tsp pure vanilla extract





Procedure

Pre-heat oven at 350 ºF

  1. 1) Sift the flour, baking powder, salt, and cocoa powder. Mix all the ingredients and set aside.


  2. 2) Mix the sugars. Set aside.


  3. 3) Using a stand mixer, start by adding the yogurt, vinegar, and olive oil until all are incorporated and creamy. Mix for 2 minutes at medium speed.

  4. Add the sugar mixture and beat for 3 minutes at medium speed.


  5. 4) Lower the speed, add the flour mixture, and mix until a dough is formed. Add the chocolate chunks.


    5) Scoop balls of cookie dough and place them on a lined baking sheet.


  6. 6) Bake for 15-17 minutes. Transfer to a cooling rack.
