Every time I make this dish, it feels like a warm hug from the past. One thing that I love about this recipe is that you can really make the sauce adjusting some of the ingredients, for example if you want a more dense sauce you can use cream cheese or to add more protein you can use cottage cheese. 


I have found the cream fraiche is the most similar to Mexican cream.  You can also use sour cream instead.

How to Clean Poblano Peppers After Charring

Roasting poblano peppers gives them a smoky flavor and softens their texture, making them easier to use in recipes. To clean them after charring:

  1. Roast the peppers over an open flame, on a comal over an electric or gas stove, on a grill, or in the oven under a broiler until their skins are evenly charred and blistered. I also like to used my panini grill to charred them. 
  2. Immediately transfer them to a bowl and cover with plastic wrap or place them in a sealed plastic bag for about 10 minutes. This helps steam the peppers, loosening the skins. I like to call this step the "Sweating Step".
  3. After the sweating step, put the chiles in an iced bath, this will ease the peeling step.
  4. Gently peel off the charred skin using your hands, you can use gloves or wash very well your hands after peeling them. 
  5. Cut off the stem, slice the pepper open, and remove the seeds and membranes for a milder taste. If you are going to make chiles rellenos you need to leave the stem. 

Now your poblano peppers are ready to be used in your favorite dishes!

Charred Poblano Pasta

Description

This delicious pasta is made with charred poblano peppers and creme fraiche, this will become one of your favortie pasta recipes

Ingredients

  • 1 package (16 oz) cooked al dente pasta
  • 1/2 cup creme fraiche
  • 2-3 charred, deseeded and clean poblano peppers
  • 1 can(12 oz) eveporated milk
  • 1/2 cup Parmessan cheese

Instructions

  1. Charred the poblano peppers, take out the seeds and veins. Set aside.
  2. Blend the creme fraiche with the poblano pepper and the evaporated milk, seasoned to taste with salt and pepper.
  3. In a sauce pan bring the sauce to a simmer.
  4. Pour the sauce over the cooked pasta and stir.
  5. Add the Parmessan cheese. You can put the pasta in the oven so the cheese can melt. Enjoy!

Notes

You can use any kind of pasta.

You can also put the pasta in the baking dish, pour the sacue on top bake at 350ºF for 30-40 min until cheese is melt.

You can leave some seeds if you want the sacue to be more spicy.
