Ingredients

  • 4 cups shredded green cabbage
  • 1 bunch of green scallions
  • 1 cup crumble fetta cheese

For the Dressing:

  • 1/4 cup  white vinegar
  • 1/2 cup light extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare the Vegetables – In a large mixing bowl, soak the shredded cabbage in water, add a splash of vinegar and a pinch of sea salt.  Let it soak for 30 minutes or so. Rinse the water and transfer the cabbage to a bowl.  Add scallions.
  2. Make the Dressing – In a small bowl, whisk together the olive oil, vinegar salt, and pepper.
  3. Combine – Pour the dressing over the coleslaw and toss well to coat all the ingredients evenly. Add the fetta cheese and combine. 
  4. Chill & Serve – Allow the coleslaw to sit for at least 15-20 minutes to let the flavors meld together. Serve chilled and enjoy!
